The Perfect Almond Cookie Recipe!

Who wouldn’t devour a decadent, ooey  gooey, cookie? Crunchy on the outside and soft in the inside. Mmm! We at MHW love cookies at anytime. It is our go to easy dessert. Cookies (especially chocolate chip cookies) used to be a regular item on our grocery basket and a pack of cookies wouldn’t last on our shelf for over two weeks. However, becoming more mindful of what we eat in the past two to three years changed what we buy and consume. Have you watched That Sugar Movie on YouTube yet? If not, we definitely recommend you to do so. It changed the way we look at food and made us better food label readers. The alarming amount of sugar packed in a store brought cookie is quite devastating. Initially, it was hard to quit buying cookies but now we walk passed the cookie section without even a second glimpse (the first glimpse is still halal!).

Quitting buying store brought cookies didn’t solve our cookie craving problems. So we looked for alternatives. Desperate times call for desperate measures. That’s how we came up with this recipe. Ever since we discovered these delicious ‘melt in your mouth’ kind of almond cookies, we’ve never looked back and have been obsessed with them! I tried the keto diet for a while and had to alternate flour based recipes with almond flour. Its an easy, nutritious, and delicious alternative to flour in the keto diet. That’s when I got the idea of creating these cookies. These cookies are gluten free and can be easily swapped to keto friendly version by just substituting sugar to a desired sweetener (preferably Stevia). Guilt free solution right here!

Few things to take note on this recipe:

> Its a one bowl ‘mix it altogether’ kind of recipe which makes the whole process timely and super convenient (less things to wash at the end!!). Now that makes this recipe way more convenient.

>The cookies dough is slightly sticky, so working with buttered or oiled hands will save you the misery of sticky and messy hands.

>The dough has to be shaped into your desired cookie shape before baking. I did not use a cookie cutter. I shaped mine by hand. If you are to use a cookie cutter, roll the dough between two cling wrap or baking paper and cut into desired shapes.

>The amount of sugar I have used here is very minimum and is the perfect sweetness for our family. You could however add a little more or less to fit your sweet tooth.

>Use of chocolate chips in the cookie is totally optional but it elevates the taste of the cookie. (makes it even more indulgent). I have also tried toffee bits instead which is a perfect combination with the nutty flavor of the cookie. M&Ms, brownie bits, candid nuts ….. go crazy with the toppings or even glazes. Options are variable here, you could add whatever desired toppings to make your cookie extra delicious.

Recipe– (yields 10 medium sized cookies) 325C° (15 min bake time) (total prep time 15 min)

– 2 cups almond flour

– 2 1/2 tbs castor sugar

– 1 1/2 tbs melted butter

– 1 large egg

– 1 tsp vanilla extract

– 1 1/2 tbs chocolate chips (optional)

Directions:

Preheat oven to 325C°.

Line a baking tray with parchment paper.

In a bowl mix together almond flour and castor sugar.

Then add in melted butter , egg and vanilla extract.

Using a spatula mix all the ingredients thoroughly.

 

Once a sticky like dough is formed, add in your desired flavor enhancers (in this recipe, I used chocolate chips) and give it a mix.

Form the cookies into shapes of equal sizes and place on the baking tray. Make sure to leave a gap in between the cookies so they don’t stick to each other during the baking process.

Bake the cookies for 15- 20 min or until the bottoms turn golden brown. (the bake time depends on your oven)

Once the cookies are done cool on a baking rack and enjoy!
